It's a file called defaults.nh The line you want to change is fairly near the top. It says ibmgraphics. You should simply put an exclamation mark in front of that. I find that "menustyle=traditional is another line I make certain is active. I haven't had as much luck with Moria and Angband. It's harder to navigate with those because there isn't any way to get row and column information like there was in Dos. It's too easy to get mixed up.
