Hi Ron, By default all the voices are selected. If you don't want certain voices you have to do a custom install to unselect the voices you don't want installed.
As for customizing the voices such as pitch, volume, etc you should be able to change the rate and volume, but you can not adjust the pitch. That's just the way the voices were made.
