It now looks like the problem is with pkg-config and not the pkg-config files.
I tried running the pkg-config command in question using an older version of pkg-config /opt/garnome-2.11-20050616.1615/pkg-config --libs gnome-pilot-2.0 which yielded the expected result. Hmmm... Why is that? "We" did bump up the version of pkgconfig from 0.15 to 0.17.2.
