Geoserver is awaiting GTModelTypeGeoKey (Short,1): ModelTypeProjected Is there something specific in EPSG:3857 that makes it into User-Defined, or what happens? I used GDAL 3.1.0dev for testing, with command gdal_translate -a_srs epsg:3857 test.tif 3857.tif -Jukka Rahkonen-
