There'd be a third possibility (server-dependent) - flagging the starred messages and using the \Flagged SPECIAL-USE folder. Dovecot is perfectly capable of populating such a folder correctly, although it does require that your administrator has set it up. Actually, just exposing that as the Important folder, when it exists, would probably be a reasonable thing to do.
