In my case, I was considering a) the farmed escargot
species available in the US and b) apple snails, since
I happen to like them anyway!  In both cases I am
wondering about the parasites: do snails raised for
human consumption typically harbor parasites?  Do we
just assume they are killed by cooking?
In the case of aquatic snails, can aquatic parasites
switch to terretrial hosts (does an internal parasite
even notice the difference? probably not, I guess)
Most importantly, can you de-parasitize a mollusk? 
How are they transmitted from generation to generation?
