In Houston, there's a restaurant called Todai. It's basically a HUGE Vegas-style buffet with one side cooked Japanese food, the other side various types of sushi. At the end of the Sushi line, there's also a section where you can ask the chefs for special items. I don't remember the exact prices, but it ranged from about $15 for lunch during the week to $25 on the weekends. It's located in the mall just after the second intersection of I-10 and 610 next to Jillians and the movie theater.
