Couple things.. First, what are you gonna use for input? You'd need something single-handed, probably with buttons you can feel your way around. Also, motorcycles have notoriously weak alternators. A lot of them can barely drive their own headlights, much less even a miniature PC. You'll probably want to invest in a larger alternator or expect to have your battery worn down pretty fast. BTW, Java-enabled cell phones can be pretty fun things to develop on. Once you write an app that'll run on the mobile java stuff, it'll deploy on a wide range of portable hardware..
Hmm.. I've been doing a little research on VoIP lately.. this has me thinking of a possible evil project.. Run asterisk open source PBX on your home box, have it connect to your phone line and provide your basic gateway between POTS and your home VOIP network including voicemail and such.. then write a java app for cell phones that'll use IP to tell your linux box at home to call your cell, relay your voicemail messages and read your emails to you with festival. After that's done, have it queue up an mp3/ogg playlist and start playing music to you over the phone.. take advantage of those unlimited night/weekend minutes that the phone companies think you'll never use.
