The only CoLo datacenter in Baton Rouge that I know of is NTG ( http://www.ntg.com). Their headquarters is located in the United Plaza, but they bought the old Solid Systems datacenter in the Tech Park and added a lot more capacity. Very good deal on their part. Solid Systems lost their shirt.
Are you evaluating whether to start up a datacenter? NTG was doing okay last time I was there, but they had lots of unused capacity. They probably have more customers now after Katrina. NTG will be your biggest competitor locally. You will need to differentiate from what they offer. The BRLUG did a special tour of NTG about a year ago, it was pretty cool to get the behind the scenes look at their OP center, network management and backup diesel generators.
