Text of an element is a node of text() so to replace the value of an element
just reference the text() node
let $node-text := $node/text()
return
xdmp:node-replace($node-text, text {"foo"})

Is there any inbuilt function to replace node text , or we have to use
xdmp:node-replace, I found xdmp:set but that work only for a variable not for a
node.
