Just map that server as an additional account in evolution, and then
drag-and-drop your existing folders over to it to copy them your
existing store.  I'm pretty sure that evolution will create the folders
and copy all your mail over.  I'm not an evolution user, however, so I
might be wrong on that.

That's for your old mail.  For new mail I'd just use fetchmail or a
forward from wherever the mail is currently going.  I just run my own
email server and courier-imap just reads the .maildir folders directly...
