variation in cables sold as "Cat6". Also, 5e will support Gb Ethernet.
That said, I'd go with Cat6 since the difference in cost is pretty
small, especially compared to the labor of pulling wiring in a building.

Cat6 was ratified in June 2002. ANSI/TIA/EIA 568-B.2.1 or ISO 11801:2002 are the final documents. Anyone selling Cat6 products (unless they're very shady) is selling stuff that meets the spec.


For the OP, go with Cat6. There's a small (but not insignificant) incremental cost, but it's more or less 7-year "future proof", while Cat5e isn't. Gigabit Ethernet (GigE and 1000-Base-T) will run fine on Cat5e cable, though, so if you need to save every penny you can...
