Netatalk works perfectly fine, I'm running it to print from my Mac OS 9.1 beige desktop G3 since many moons, without so much as a hickup. Netatalk documentation is the worst you'll ever find for any Linux application, but let the thought that it will eventually work well serve as a reassuring hug before you attack the installation. ;) There's a mailing list for Netatalk development that has many useful hints, http://marc.theaimsgroup.com/?l=netatalk-devel has a complete archive of the past two years or so.
Two things before you start: You have to enable Appletalk support in your kernel, and you need to convert the PPD driver files for your CUPS printer on the Linux host into a Mac-readable format (basically, replace the EOLs with CR/LF) and install them as Postscript drivers on the Mac.
