Hi Josh,
I just went through setting this up yesterday, so lets see if I can help:

I've been going through the gentoo virtual mail howto and can't seem to
get past the courier-imap section. I can recieve mail directly through
my maildir directory, but when I try the pop or imap setups, I keep
getting login failed errors.

Check to see that authdaemond is running, since that needs to
functioning for it work.

I'm not sure what I'm doing wrong. I put in my correct user password. I
believe that the courier-imapd, courier-imapd-ssl, courier-pop3d and
courier-pop3d-ssl daemons are supposed to check the /etc/passwd (or
/etc/shadow) file(s) to authorize, so it should let me connect with my
normal login/password, right?

You said you were going through the virtual mail how-to, which includes
setting up authentication against a mysql database -- is mysql running?
And did you make entries for your user in the mysql database?
