You could have typed in the wrong info into /etc/fstab (hda3 instead of hda5).

Just boot from the install cd
mount /dev/hda5 /mnt/gentoo
and check  /mnt/gentoo/etc/fstab

If it still panics check that you have support for your partition compiled into the kernel (reiserfs etc)
