Sorry if I sound a bit thick, but I've worked out that:

USE="-gnome" emerge xmms

Would emerge it without the older gnome stuff. Should I just set -gnome in
make.conf to ensure other packages don't pull in older stuff? What do I stand
to lose if I do that?
