From 'man XF86Config':
Option "DontZap" "boolean" This disallows the use of the Ctrl+Alt+Backspace sequence. That sequence is normally used to terminate the X server. When this option is enabled, that key sequence has no special meaning and is passed to clients. Default: off.

Personally I think that this option should be on by default, but at least now I know.
I don't. Ctrl-Alt-Backspace is a very handy key combination to have when you're trying to put together a working XF86Config. With older hardware, it was a big pain in the butt to try to get to an Exit menu option when the screen is jumping around because you entered an incorrect HorizSync or VertRefresh value.
