Could someone tell me what I would have to do to get the read-write
access to my UDF formatted CDs?

Use the multisession to burn an additional session with the new files?

That won't work, of course, if the CD's previous/original session was
burned with no multisession, thus is closed (fixated).

It is possible that we do not understand one another. (: I talk about formatted rewritable CDs (or CD-RWs), the compact disks we can use in a way we use diskettes. I need them for backup, and must be possible to synchronize files in the backup with files on my HD, therefore a full read-write mode everywhere.

Yes, I did understand that generally, but there are many ways to transfer data to a CD, and you were not so clear that you specifically wanted to packet-write it (drag and drop burning from a file manager, which is the closest thing to "diskette behaviour" that I know of). If you just wanted to add files to a pre-existing CD, you would need to additional session to a multisession CD, the way that the vast majority of non-XP users do.

But, being that I am no fan of UDF or packet writing, it is possible that UDF and ISO 9660 are not mixable, so in that case, I would be wrong, but wouldn't have known it.
