As Nick has already pointed out, you weren't very specific with your question.
What's wrong with Gentoo? There are plenty of folks out there running Gentoo
on embedded devices.
I am currently at work (w/o net access) so I can't provide you with some links.
I'd imagine that there is a gentoo-embedded ML and I know for certain there is
a #gentoo-embedded on irc.freenode.org.
