Do you have the proper /etc/localtime sym link set up?

Mine is:

/etc/localtime -> /usr/share/zoneinfo/US/Eastern

you mean ../usr/share/zoneinfo/EST5EDT (inverted EDT EST)?
generally I use
../usr/share/zoneinfo/Europe/Rome
so don't know if it's what you want
