Unstable is still pretty stable. If you really want to have fun start to use some live ebuilds and rebuild new versions each day from svn/git, and then deal with problems that occur because they expect some specific git version of a library, so you use live ebuild of that, which breaks other ebuilds which are made to work with the stable release, and... :)
