Sorry for being shameless: I once described a ZFS-based gentoo setup with encryption for the german linux magazine. They translated it and it was published in other parts of the world as well: http://www.oops.co.at/en/publications/english-translation-of-zfs-article I delivered a demo-VM as well but I don't run that setup on my productive systems currently.
