Look for the "-af" switch in man mplayer. 

In particular, assuming you have a stereo disc (2 channel output), 
  mplayer -af channels=2:2:0:0:0:1 <source>
would play channel 0 (probably the left? assuming I have my speakers
setup right...)
  mplayer -af channels=2:2:1:1:1:0 <source>
would play channel 1

For more complicated setup with more channels, refer to the man page
for more details.
