Just follow the instructions in the install sections of the handbook,
and when it comes to the partitioning, just delete all the partitions
that are there before creating those for gentoo.

Of course I have to write that you need to be sure this is really what
you want, just in case.

I've just checked and there is a section on removing all partitions from
a disk in the handbook so you should be able to work it out :)
