Hmm... you sure?. As far as I know, you can safely remove restconfig,
wcs 1.0 and wcs 1.1 (if you remove also the gui components) and quite
likely wms too, if you remove its GUI as well.
WFS is tricker, as there is a number of modules depending on it (wms in
particular)
