Sean, GeoServer 2.10 is so old that I doubt anyone knows what would happen. I'd strongly recommend to upgrade to GeoSever 2.25 as soon as possible, if nothing else, for the numerous security fixes that were applied in the 15 releases separating them... And yes, I get that might take a while, and that you should do it carefully with good testing with the existing client apps, but really, you should schedule this activity.
For the database upgrade, can you just create a copy of the database, upgrade the copy, and point geoserver to it, to see if it works?
