OL works, Gaia worked last year (have not tried since), and generally
WMTS seems to work well for successful gettile requests.
But they did change a few things related to exceptions (see emails from
Moten Lindegaard on the geowebcache-devel list), and there is at least
one bug in getfeatureinfo. So I'm still interested in learning about
more clients.

Actually OpenLayers got WMTS support in July, see

Demo at http://openlayers.org/dev/examples/wmts.html (against
GeoWebCache embedded in GeoServer).

GeoServer doesn't have any native support for WMTS at this point,
you can use GeoWebCache (/geoserver/gwc/service/wmts , only
support KVP) and configure layers manually (in
<GEOSERVER_DATA_DIR>/gwc/geowebcache.xml) so that they're not
really cached.
However, this was mostly implemented against one of the last
drafts of the WMTS standard, and no real clients were available.
So this still needs some testing.
Out of curiosity, what client(s) are you intending to use?
