Thanks for the Advice Vince, however I am tied to Amazon for the next few months while we figure out a better longer term option (probably with RackSpace).
However I still need to figure out wether I should use more RAM or more CPU to host more than one GeoServer instance in the same server. Cheers, Ariel.
