You need to edit postgresql.conf to enable full logging.

Make sure you have something like:

log_line_prefix = '%t %c %u ' # time sessionid user
log_statement = 'all'

But as Andrea says, the issue doesn't seem related to Geoserver at all, so if 
you get stuck, the best place to ask is probably the postgresql list.
