I think your Java installation has been ruined by some other
application, tipically gvSig or Esri software,
by installing right into it some older versions of JAI.
The jars installed there take precedence over the ones GeoServer has
in WEB-INF/lib and that results
in compatibility issues.

I'd suggest you to install a new clean JDK/java runtime and try again
