Hi Andrea,

all problems with the mosaic and the image pyramid data store are solved by now 
:-)

It was not an issue with the Java installation but with the jai-imageio. I used 
the wrong version as I got my version from the oracle pages. There, you can 
download the jai-imageio.jar as version 1.0.1 only. If I would have been 
looking closer on the oracle pages, I could have seen that they mention that 
the jai is now a community project on java.net. But I looked in the download 
section directly as in the Geoserver documentation it is stated that the 
library is built by Oracle. In order to avoid future confusions it might be a 
good idea if you could point to the download section on java.net directly, i.e. 
http://download.java.net/media/jai-imageio/builds/release/1.1/. This would have 
saved me some time and I could assume that it would help others as well.

Nevertheless, once running I'm happy and quite impressed about the speed from 
the ImagePyramid plugin. Although, I still have to figure out how to determine 
the best amount of levels depending on the scale which should be used for the 
different layers.

I think your Java installation has been ruined by some other application, 
tipically gvSig or Esri software, by installing right into it some older 
versions of JAI.
The jars installed there take precedence over the ones GeoServer has in 
WEB-INF/lib and that results in compatibility issues.

I'd suggest you to install a new clean JDK/java runtime and try again
