Hi Ashley, An MXD only contains styling information and pointers to your ESRI datastores (shp, SDE, GDB, WMS etc) - It does not contains any geographic or attribute data.
You can migrate the styles in the MXDs to SLDs and use geoserver to configure a datastore against a shapefile or SDE datastore fer example to serve the data.
