I noticed that this only works in Geoserver 2.1.1. We also have installed
Geoserver 2.2 (geoserver-trunk-2011-08-02-bin.zip) on Windows with the gdal
extensions and the geoserver-2.2-SNAPSHOT-dds-plugin.zip and we are getting a
Java error("Illegal value for argument "resolutions""). We don't have
a "resolutions" parameter in the wcs call. The call works perfectly with
Geoserver 2.1.1

I agree with Chris, WCS is the service you're looking for, though OGC tried
its best to make it hard to use.
Here is a sample requests, which use ArcGrid as the output format
WCS 1.0 sample request:

The resx,resy are the resolutions of the output, they must be equal
for arcgrid format to work.
I picked those values from the result of DescribeCoverage, which gave
me the native resolution:

I'm not going to show you the WCS 1.1 example, since it's quite a bit
more convoluted :-(
