I think I found a bug while working with Geoserver 2.1.0.
It can be reproduced easily with the demo data. When I create a new
workspace (making sure of saving it just once), with for example a
shapefile datastore: data_dir/data/nyc/poi.shp, and then I try to
preview the layer, it doesn't work with WFS/GML.
If I save the workspace (without changing anythinq) a second time, then
all the previews work.
Are you starting form an empty setup, with no other workspaces?
If so it's likely that it has been fixed a few days ago
I've just tried on a server that already had other workspaces and WFS/GML
worked fine at the first attempt, no need to re-save

I'm now working with Geoserver 2.1.1 due to some other issue with the
PDF output format.
I have exactly the same issue with this version. As I said before, I'm
using the demo data, all the other workspaces are still there:
cite,it.geosolutions, nurc, sde, sf, tiger, topp. Basically what I
just did is install and try.
I'll try to re-install just to make sure.
