Hi, Same experience from some users TinyOWS server with ArcGIS data interoperability extension. ESRI support answered that they cannot do anything because the server and PostGIS where the data comes are not ESRI products. They asked to repeat the case with ArcGIS server and come back then. I did not find anything wrong in GetCapabilities-GetFeatureInfo-GetFeature and no other WFS client I have been testing multiplies the fields. Of course they do not because extra attributes do not exist in the schema not in data. I believe that the ESRI WFS connector is made by Safe Software so perhaps FME behaves or has sometimes behaved similarly.
I had a feeling that problematic WFS feature types had attributes which could have empty values in the database. Then the GetFeature response comes at least partly without those elements in GML. Anyway, there is nothing you can do and it will not be fixed before ESRI believes they have this bug. The moment I load a WFS from geoserver something very strange happens. When I look at the attribute table I notice that almost every field has been copied and given the suffix xsi_nil.
