Hi what you could do is:- filter data on the fly (for the getFeatureInfo) using 
freemarker 
template:http://docs.geoserver.org/stable/en/user/tutorials/GetFeatureInfo/index.html
 - better using a recode transformation function into the 
style:http://docs.geoserver.org/latest/en/user/styling/sld-tipstricks/transformation-func.html#transformation-func
(But also this is not optimal)
I suggest you to manually modify the data if it is possible and use 
jndi/postgis if the dataset is really big.
