There is no such functionality in either plain WCS or WMS.

In WMS you can actually pass a filter against rasters, and if the raster in
question is a mosaic you'll
end up filtering on the properties attached to the mosaic tiles, but not
against the raster contents.

As far as I remember what you're looking for is provided  by the WCPS
service (Web Coverage Processing Service,
http://www.opengeospatial.org/standards/wcps) which we don't implement
(yet, if anybody is interested in donate code in that direction or funding
its development we'd be glad :-p )
