Rick,
on the home page of your GeoServer instance, select the About GeoServer
link in the left-hand column. This will give you detailed version
information for GeoServer and the GeoWebCache and GeoTools versions
against which it was built (also contained in GeoServer). It should look
like this:

If a deployed GeoServer is not running, you can look in its WEB-INF/lib
directory; all the JAR file names contain their versions gs- prefix ones
for GeoServer (although older ones will lack this) gs-main-2.5.1.jar or
main-2.2.3.jar, and gt- for GeoTools, like gt-main-10.6.jar. If you see
any SNAPSHOT versions, it means you are running a nightly build; it will
take a bit more to figure out which one (there are also files containing
revision information included inside WAR and JAR files).
