I have enabled geotools logging in Geoserver, and after doing a
layer preview wms request, this is what i get in the log:

Normally this happens if you have the oracle driver both in GeoServer
web-inf/lib, and in the web container
shared libs (e.g., tomcat/lib).
Make sure you have it in a single place

Could this be related to the issues i've reported?
Another important note: the geoserver in question is deployed on
Tomcat 8 / JDK 8. Any advice either if it is suitable for a
geoserver 2.5.0 / 2.5.1?
You are totally on your own I'm afraid, JDK 8 is not supported, we
just moved to support JDK 7 on the
GeoServer dev series (will become 2.7.x in September). May work, may not.
