Hi Peter I have no idea specifically on your ElasticSeach implementation however, your question seems related to the application schema implementation/configuration.
There is also the cache of the public schemas, where you can store equally your own as described here: http://docs.geoserver.org/stable/en/user/data/app-schema/app-schema-resolution.html#cache How this works without a deployment of the schema app plugin, I have no idea, it just might be similar or cannot help you at all.
