Hi, I have never tried but there should be support for curves if you use PostGIS http://www.geo-solutions.it/blog/postgis-curves-in-geoserver/

Can you say what format you are requesting the WFS service to provide the feature(s) in? Can you be a bit more specific in explaining what you mean by "real" and "stroked"? By "stroked" do you mean the curve it made up of straight lines?
