Aaron,
what makes you think that the GeoServer developer guide is out of date?
Screenshots may not have been updated for the latest versions of
GeoServer and tools such as Eclipse, but the process should still be the
same.
Much development occurs in GeoTools, so please check out the GeoTools
user and developer guides.
