Well that's actually the main reason. The screenshots didn't agree with what I was actually seeing in Eclipse. For example, the quick start shows a screenshot of starting the web-app project, but in Eclipse it's called gs-web-app. No big deal.
I did also notice that the unit tests fail when building with Maven. I disabled them and it builds, but is that expected? Also, after importing the GeoServer projects into Eclipse, it shows several errors, and won't start up. It could be just my configuration though. Thanks, I'll checkout the GeoTools documentation.
