Thanks for the reply Andrea. I don't know of other WMS which does that - tbh Geoserver is the only WMS I've ever used.
I like your suggestion of defining named styles (combinations) in the group configuration and then specifying those via the styles param. I'll bring that idea into the next dev meeting within the company, maybe something we could implement/sponsor in the future. For now I think we're going to go around it. On our setup each layer is a view on a PG DB. We're just going to create new DB views which are a UNION of the other 2 and create a new layer on Geoserver for those. Again, thanks for your help.
