I might be wrong, but believe that "Sans Serif" is not an actual specific
font, but just a name that
is best matched to whatever sans serif font is available. From the Java
documentation:

Java SE defines the following five logical font families:

   - Dialog
   - DialogInput
   - Monospaced
   - Serif
   - SansSerif

These fonts are available on any Java platform and can be thought of as
aliases for some underlying font that has the properties implied by its
name. A Serif font is a font similar to Times New Roman, which is commonly
used in print. A Sans Serif font is more typical for onscreen use.

These fonts can be customized for the locale of the user. In addition these
fonts support the widest range of code points (Unicode characters).

I would use the same physical font instead (there are a lot out there that
are open source and can be freely installed across platforms), e.g.
Google's Noto or Vera Sans.

If that's not the (only) issue, there might also be platform specific
differences, for example I believe OpenJDK on Linux uses whatever FreeType
library version is available on system, while Oracle JDK on Windows might
be using a different library (unsure, you might want to check).
