Hi Tom!
I just did this in a similar environment.
But I am running Geoserver as a web-app under Tomcat. Which made the 
installation very simple. However, the settings need to be applied to the Java 
settings, and I did not touch any Geoserver or Tomcat bat files. That did not 
work.
Also, the PATH setting and Gdal variables needed to be set in the machine 
system variables. 
I can be more specific if the Tomcat web-app configuration applies to you.
