Yes they are, running through the codebase for deprecations is the hard 
one. We have done the main
point of the deprecation run already - removing legacy and migrate 
modules. But the QA run still should
go on.

I suppose the easiest thing to do would be to check out geotools 2.0, 
generate the javadocs, and look
at the list of deprecations...

I am working on demo, but I am working on trunk. For GeoTools 2.2.x I 
was happy just to get it in the
build again ;-)  I would actually like to purge out demo to remove all 
the code that is not used
in the user guide ... which right now will be most of it.

The property data being the exception as the the tutorial is intended 
for geotools developers.

Emphasis on the removed. If it is not maintained/organized it becomes 
less then useless.

We have been waiting on uDig 1.1 release, but we are not beholden to 
that (the uDig team can ask for GeoTools 2.2.1 if needed for example).
