It's simply like a bridge to jai-tools.
To give a better idea, it's similar to the coverage module which has
"GeoTools bridges/wrappers" for JAI operations which are self contained in
jai-core. As an instance:
org.geotools.coverage.processing.operation.Histogram and
org.geotools.coverage.processing.operation.Extrema simply wrap
javax.media.jai.Histogram, javax.media.jai.Extrema which live in jai-core.
In this case, you will have a
org.geotools.coverage.processing.operation.ZonalStats which will wrap a
jaitools.media.jai.zonalstats.ZonalStats.
