+1 I think you may already be aware, but Josh Fix did a lot of work on something similar a couple years back, and it looks like the code is still available here: https://github.com/joshfix/imagemosaic-stac I'm not sure if it'll be at all useful (I expect largely not, given that its been unmaintained for the last couple years), but I wanted to at least bring it up, in case there are some pieces there that could still help.
