It would certainly be possible to use GeoTools, but for what you are
doing I think it would probably be easier to use another library.

Check out VisAD which is a great java data visualization library...

GeoTools would be useful to you, in addition to something like VisAD,
if you need to do geo-spatial operations such as moving data between
different map projections.
